What I Eat in a Day as a Busy Mom of 4 and Entrepreneur

 
 
 

I don’t have time to eat.

Just one of the many lies I used to tell myself and believe. Preparing, cooking and eating my meals were time stealers. The problem with that lie is that while you think you’re saying time up front what you’re ready doing is impacting your productivity and efficiency by not properly fueling your body.

Eating well balanced meals guarantees you’ll have sustainable energy throughout the course of your busy day. The key word here is sustainable. When you’re on-the-go like you and I are, the only thing you can’t afford is not putting gas in the engine. Come 3 o’clock you’re worn out mentally and physically and it’s not a surprise.

Side Note:

I love creating beautiful meals served on nice plates for my family. I believe in presentation. I believe in showing (not just telling) your family that you put them above everyone else. Maybe it’s the Latina in me and the profound link we have to food, culture and fellowship. But there is something timeless about a family sitting together at the table, in front of a hot, beautifully plated meal curated not for guests or special invitees. But for one another. As a way of honoring each other and being fully present in this moment encapsulated by food.
